Big news from The Dancing Bear! We’re proud to announce that our very own Kristine and Roy have earned their place in the Top 100 of Diageo World Class Australia, one of the most prestigious cocktail competitions in the country.
This competition celebrates the best bartenders, pushing creativity and skill to new heights.
Kristine wowed the judges with her inventive creation, Mrs Pops—a tribute to the legendary Dick Bradsell, creator of the Espresso Martini. This innovative cocktail features Mr Black, Ketel One Vodka, Coco Pops mix, demerara, and cacao nib tincture—a nostalgic, yet sophisticated twist on a classic favorite.
Meanwhile, Roy took inspiration from The Grand Westella Function Centre, crafting The Long Walk, a masterful blend of Johnnie Walker Black Label, red vermouth, and sweet + salty carrot foam. A cocktail that’s as bold as it is refined.

The Diageo World Class competition is the gold standard for bartending excellence. Each year, Australia’s most talented mixologists battle it out, showcasing their creativity, precision, and knowledge of spirits.
